Memorial Day Meal Part I

With Memorial Day coming up, there are plenty of opportunities to get together with friends and family whether you are relaxing at the lake or getting together for a backyard barbeque.  Throughout this week I will be planning a Memorial Day menu, appetizers all the way to a yummy dessert.  If you are the hostess or the guest, hopefully you can find something to whip up to help you entertain.

Black Bean Salsa
This is a perfect appetizer to prepare beforehand. 

1 1/2 tablespoons red wine vinegar
1/2 teaspoon balsamic vinegar
1/2 tablespoon lime juice
1 1/2 teaspoons hot sauce
1 teaspoon olive oil
1 clove garlic, minced
1 medium avocado, diced
1 can (15.5 oz.) black beans, drained
1/2 can (15.5 oz.) black eyed peas 
1 can (15.5 oz.) corn kernels, drained
3 chives, chopped
2/3 cup chopped fresh cilantro
1 cup grape tomatoes, sliced in half
Dash of cayenne pepper
Salt
Pepper
Sour Cream (optional)
Tortilla chips

In a large bowl, mix together vinegar, hot sauce, oil, garlic, cayenne pepper, salt and pepper.
Peel avocado and add to mixture.
Gently add in beans, corn, chives, cilantro, and tomatoes.  Toss to coat.
Add more salt and pepper as needed.
Top with a dollop of sour cream.
Serve with tortilla chips.
If preparing beforehand, keep separate the liquids from the beans and corn and then toss right before serving.
