Memorial Day Meal Part III

Grilled Stir Fry
What can I say about these shish-kabobs??  They are easy to prepare and even easier to eat!
That seems to be a theme going on this week.
I like to keep things simple, especially when I know I might be entertaining.
There is so much other stuff going on, there is no need to waste any precious time.

You start off with two boneless, thick cut pork chops.  Cut them into large chunks.


Get out your food processor and throw in your onion, garlic, soy sauce, sesame oil, water, dash of cayenne just to kick it up a little and a handful of fresh mushrooms.  I know, mushrooms right??  But they make the marinade thick and wonderful, I promise.
Turn on the food processor and let it spin everything together.

Pour the marinade over the chopped pork and let it sit in the fridge for at least an hour.
Next, dice up your veggies into large pieces.

I threw in some more mushrooms to be put on the skewer, but feel free to use whatever vegetables you prefer.
Once you are done dicing and slicing, throw your veggies in a bowl and coat them with some soy sauce and sesame oil.

Once your pork is done marinading, you can start to assemble your skewers.  
Tip: rinse your skewers under water before assembling them to keep them from burning on the grill.
I started with pork followed by a pepper, onion then mushroom back to the pork.

All of this can be done beforehand and simply stored, covered in the fridge. 
Once you are ready to eat, fire up the grill.

Cook them on the grill with the lid down, turning once for around 15 minutes.  Check the pork making sure to not overdo them. 
Serve with a side of steamed broccoli and enjoy!!




Grilled Stir Fry
2 thick, boneless pork chops
1 large red bell pepper
1 large yellow bell pepper
1/2 medium onion
1/2 cup fresh mushrooms
skewer sticks

Marinade for the pork
1/2 medium onion
3 garlic cloves
2 tablespoons water
1/4 cup fresh mushrooms
1/4 soy sauce
2 tablespoons sesame oil
Dash of cayenne pepper

Blend all of the marinade ingredients in a food processor.  Cut the pork chops into large chunks.  Pour the marinade over the pork in a bowl and refridgerate for at least an hour.

Cut the vegetables of choice into large chunks and toss them with a coat of soy sauce and sesame oil.  Set aside.

Soak your skewers in water before assembling.  Light the grill.
When ready, start with the pork followed by the pepper, onion and then the mushroom.  Repeat until the skewer is full.

Place on the grill, cover and cook for 6-7 minutes.  Turn them over and cook for an additional 7 minutes.  Check the pork and cook longer if needed.
